Description: The 2007 Bedlam boasts a vibrant nose of spring flowers, Asian pears and lemon-lime. On the palate the wine displays ripeness, viscosity, a smooth texture and substantial depth and concentration.
Vintage: The weather in 2007 was spectacular. Spring brought warm and dry days during April and May, followed by beautiful weather during flowering (the last week of May and first week of June). July and August were dry and temperate with just enough rain to keep the vines going, and then a beautiful fall capped off a wonderful vintage.
Vineyard: The 2007 Bedlam was made from a blend of fruit from all of our white varieties, whose vineyards face northeast to northwest and yielded between 1.75 and 3 tons per acre.
Fruit handling: The fruit for the 2007 Bedlam was hand picked by our vineyard crew between September 11 and September 18, 2007. Each lot was hand sorted to remove any imperfect berries, then cooled overnight and gently pressed. Juice from each variety was added to the blend immediately after pressing.
Vinification: After racking and chilling for one week, the Bedlam was co-fermented in stainless steel at 60-70 degrees for 21 days. The wine did not undergo malolactic fermentation, and was stored in stainless steel with its lees stirred twice a week for 5 months. After natural cold stabilization outdoors, the wine was filtered and bottled April 1st, 2008.
